Pour in chicken stock, diced tomatoes, kidney beans, black beans, and salt. Simmer for 10 minutes.
Add rotisserie chicken pieces and simmer for additional 5-10 minutes.
Blend chipotle chilies in adobo with some soup base, then add back to the pot.
Stir in frozen corn and simmer.
Serve topped with diced avocado, tortilla chips, cilantro, aged white cheddar cheese, and sour cream. Adjust seasoning with salt if needed. Enjoy!
