Crack four eggs into a bowl and season with a pinch of salt. Whisk with chopsticks.
Heat up a wok over high heat and add one tablespoon of oil. Pour in the beaten eggs and scramble until three-quarters cooked.
Add two more tablespoons of oil and the cold rice. Season with soy sauce, salt, and any optional ingredients. Stir-fry until heated through.
Turn off the heat and add the chopped green onions. Toss to combine.
Serve as a side dish with other main dishes. Enjoy!
