In a separate bowl, mix eggs and blended cottage cheese. Cook on low to medium heat until fluffy, seasoning as desired.
Warm up tortillas, then evenly distribute the egg mixture, potatoes, Sriracha mayo, and chives. Roll up the burritos and toast them.
Repeat the process for the remaining burritos. Enjoy!
