Two-Way Mac and Cheese (Original video)

Ingredients:

• For the French Onion Soup Mac and Cheese:
• 3 white onions
• 65 g butter
• 1 tbsp finely chopped thyme
• 300 ml beef stock
• 1 tsp Dijon mustard
• 5 gratings of nutmeg
• 100 g mozzarella cheese
• 100 g Gruyère cheese
• Salt and pepper to taste
• Baguette for breadcrumbs
• 3 tbsp olive oil
• 1 tsp finely chopped thyme
• Pasta of choice
• For the Spicy Gochujang Mac and Cheese with Nashville Chicken:
• 2 tsp Gochujang paste
• 1/4 tsp miso paste
• Handful of chopped parsley
• 100 g mozzarella cheese
• 100 g cheddar cheese
• 100 g Red Leicester cheese
• 1 tsp Dijon mustard
• 1/2 clove garlic
• 2 tsp cayenne pepper
• 2 tsp smoked paprika
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp honey
• Chicken thighs
• Pickle juice
• Panko breadcrumbs
• Chives
• Caramelize onions with butter, thyme, and beef stock.
• Mix caramelized onions with Dijon mustard, nutmeg, cheeses, and seasonings.
• Toast baguette slices with olive oil and thyme, then blend into breadcrumbs.
• Cook pasta until al dente, mix with sauce, top with breadcrumbs, and bake.
• Mix Gochujang paste, miso paste, parsley, cheeses, mustard, garlic, and seasonings.
• Marinate chicken in milk, spices, and pickle juice.
• Coat chicken in flour mixture and fry until golden and crisp.
• Prepare Nashville fried chicken sauce with spices, oil, and honey.
• Coat chicken in sauce, bake pasta with cheese sauce, top with chicken, chives, and serve with pickles.
