Boil water and cook the noodles until al dente. Drain and set aside.

Bake the seasoned noodles in the oven until they are crispy.
For the dressing, combine red curry paste, lime juice, soy sauce, a pinch of sugar, and water in a jar. Shake well until the dressing is smooth and slightly thin.
Serve the crispy noodles with the red curry dressing drizzled on top. Enjoy!
