In a mixing bowl, combine semolina, room temperature water, instant yeast, sugar, salt, and vegetable oil. Mix well.
Gradually add all-purpose flour until the dough reaches a firm consistency (approximately 4 ounces or 1/2 cup).
Pour hot water over the dough, cover with plastic wrap, and let it rest for 30 minutes.
Remove plastic wrap, add a little vegetable oil, and incorporate the oil into the dough.
Grease a pan with vegetable oil and shape the dough into small balls. Let them rest for 10 minutes.
Flatten each dough ball by stretching it with your hands, then fold it from all sides, applying oil as needed.
Stretch the dough further and sprinkle cinnamon on top.
Cook the dough on a greased griddle for about 1 minute on each side until golden brown.
