500 grams strong flour (W index of 300, approximately 12 grams of protein)
12 grams fresh yeast
1 teaspoon honey
380 grams lukewarm water (adjust as needed)
2 tablespoons extra virgin olive oil
2 teaspoons salt
Extra virgin olive oil for greasing and coating
Coarse salt for topping
Instructions:
In a large bowl, combine the flour, fresh yeast, and honey. Gradually add lukewarm water until a sticky, gooey, lumpy, soft, and fluffy dough forms.
Mix in the olive oil and salt until the dough is smooth and has absorbed most of the oil. Cover the bowl and let it rest for 30 minutes.
After 30 minutes, fold the dough inside the bowl and let it rest for an additional hour until it doubles in size.
Transfer the dough to a well-greased baking tray, coat the surface with oil, and cover with plastic wrap. Let it rise for 30-45 minutes while preheating the oven to the highest temperature.
Press the dough with your fingers to create dimples, then drizzle with more oil, water, and coarse salt.
Bake the focaccia in the preheated oven for 15-20 minutes until golden brown and crispy.
Transfer the focaccia to a wire rack and let it cool for 10-15 minutes before serving. Enjoy the golden crust and soft, fluffy texture of this homemade focaccia!
