Homemade Focaccia

Ingredients
- 500 grams strong flour (W index of 300, approximately 12 grams of protein)
- 12 grams fresh yeast
- 1 teaspoon honey
- 380 grams lukewarm water (adjust as needed)
- 2 tablespoons extra virgin olive oil
- 2 teaspoons salt
- Extra virgin olive oil for greasing and coating
- Coarse salt for topping
Instructions
- In a large bowl, combine the flour, fresh yeast, and honey. Gradually add lukewarm water until a sticky, gooey, lumpy, soft, and fluffy dough forms.
- Mix in the olive oil and salt until the dough is smooth and has absorbed most of the oil. Cover the bowl and let it rest for 30 minutes.
- After 30 minutes, fold the dough inside the bowl and let it rest for an additional hour until it doubles in size.
- Transfer the dough to a well-greased baking tray, coat the surface with oil, and cover with plastic wrap. Let it rise for 30-45 minutes while preheating the oven to the highest temperature.
- Press the dough with your fingers to create dimples, then drizzle with more oil, water, and coarse salt.
- Bake the focaccia in the preheated oven for 15-20 minutes until golden brown and crispy.
- Transfer the focaccia to a wire rack and let it cool for 10-15 minutes before serving. Enjoy the golden crust and soft, fluffy texture of this homemade focaccia!
