Grilled and Roasted Piri Piri Chicken with Crispy Sweet Potato Fries and Two Sauces (Original video)
Ingredients:
Chicken
Time
Salt
Smoked paprika
Vinegar
Sweet potato
Pepper
Oil
Semolina
Jalapenos
Coriander
Red and green chillies
Red onions
Garlic
Tomatoes
Lemon juice
Instructions:
Pound a pinch of salt into the time and mix with smoked paprika, vinegar, and oil to create a marinade for the chicken. Massage the marinade into the chicken and let it marinate for 6-8 hours.
Preheat a grill pan and cook the chicken skin side down for 5-10 minutes.
Cut sweet potatoes into fries, season with salt, pepper, and smoked paprika, and bake in the oven for 30 minutes at 180 degrees Celsius/350 degrees Fahrenheit.
Coat the sweet potato fries with semolina for extra crispiness.
Make two sauces: a cheat salsa with jalapenos, coriander, and oil, and a piri piri sauce with roasted red and green chillies, red onions, garlic, tomatoes, coriander, lemon juice, vinegar, and salt.
Serve the grilled chicken with the sweet potato fries and both sauces. Top with fresh coriander, lime, and chillies. Enjoy!
