Homemade Chili Oil

Ingredients
- 300 grams of neutral oil
- Half an onion
- 5 cloves of garlic
- 20 grams of ginger
- 200 grams of chili flakes
- 50 grams of salt
- 50 grams of sugar
- Aromatics (cinnamon, star anise, clove, Sichuan peppercorn, black pepper, bay leaf)
- Roasted peanuts and sesame seeds (optional)
Instructions
- Heat neutral oil in a pan over medium heat. Add half an onion, 5 cloves of garlic, and 20 grams of ginger. Cook until they brown.
- Add 200 grams of chili flakes, 50 grams of salt, and 50 grams of sugar. Mix well.
- Throw in your aromatics (cinnamon, star anise, clove, Sichuan peppercorn, black pepper, bay leaf) and cook for one minute. Strain the oil over the chili.
- Optionally, add roasted peanuts and sesame seeds for extra flavor.
