Cut the beef into four sections and roll into balls.
Grate the onion and mix with light mayo, brown mustard, hot sauce, pickles, and a little bit of pickle juice to make the sauce.
Keep the beef balls in the fridge to keep them cold.
Heat up a cast iron pan until it's screaming hot.
Add the beef balls to the pan and smash them down. Season with salt and pepper.
After 2-3 minutes, flip the beef balls and add cheese to make it a double decker.
Stack the patties and add the sauce on top.
