Roasted Tomato Soup and Ultimate Grilled Cheese (Original video)
Ingredients:
2 cans of whole peeled tomatoes (such as Bianco di Napoli)
1 medium red onion
8 cloves of garlic
Olive oil (50-60 grams)
Salt (15 grams)
Sugar (15 grams)
750 grams of chicken stock
40 grams of tomato paste
1 Chipotle chili in Adobo (optional)
125 grams of butter
75 grams of mayonnaise
15 grams of Dijon mustard
White pan loaf bread
American cheese slices
Gruyere cheese slices
Provolone cheese slices
Parmesan cheese
Chives
Black pepper
Instructions:
Preheat oven to 450°F (232°C). In a large baking dish, combine whole peeled tomatoes, chopped red onion, sliced garlic, olive oil, salt, sugar, chicken stock, tomato paste, and Chipotle chili. Roast in the oven for 1 to 1.25 hours.
In a food processor, blend butter, mayonnaise, and Dijon mustard to create a spread for the grilled cheese.
Slice the white pan loaf bread thinly. Spread the butter-mayo-mustard mixture on both sides of the bread slices. Layer American cheese, Gruyere, Provolone, and more American cheese between the bread slices. Cook the sandwich in a non-stick pan until golden and crispy.
Blend the roasted tomato mixture until smooth, strain, and adjust consistency with chicken stock. Season with salt to taste.
Serve the tomato soup topped with chives, olive oil, Parmesan cheese, and black pepper alongside the grilled cheese sandwich. Enjoy!
