In a small mixing bowl, combine eggs, Greek yogurt, sweetener, flour, vanilla extract, cornstarch, baking soda, and protein powder (if using). Mix or blend until smooth.
Prepare a baking pan (bread pan, small cake pan, muffin pan, etc.) by coating it with cooking spray or lining it with parchment paper.
Pour the batter into the prepared pan. Add optional toppings if desired.
Bake in the preheated oven for around 30 minutes, or until a toothpick inserted in the center comes out clean. Adjust baking time based on the type of pan used.
Once baked, let the cake cool before serving. Store any leftovers in the fridge for better taste.
