Protein-Packed Greek Yogurt Cake

Ingredients
- 3 large whole eggs
- 1 cup Greek yogurt (low-fat recommended)
- 1 to 2 tablespoons sweetener
- 1 cup all-purpose flour
- 1 1/2 teaspoons vanilla extract
- 3 tablespoons cornstarch
- 1/2 to 1 scoop complementary protein powder (optional)
- 1/2 teaspoon baking soda
- Cooking spray or parchment paper
- Optional toppings: sugar-free chocolate chips, ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a small mixing bowl, combine eggs, Greek yogurt, sweetener, flour, vanilla extract, cornstarch, baking soda, and protein powder (if using). Mix or blend until smooth.
- Prepare a baking pan (bread pan, small cake pan, muffin pan, etc.) by coating it with cooking spray or lining it with parchment paper.
- Pour the batter into the prepared pan. Add optional toppings if desired.
- Bake in the preheated oven for around 30 minutes, or until a toothpick inserted in the center comes out clean. Adjust baking time based on the type of pan used.
- Once baked, let the cake cool before serving. Store any leftovers in the fridge for better taste.
