Cook potatoes in a pan with oil and seasoning for about 15 minutes until tender. Set aside.
Roast tomatoes, Chile Sano, and Chile puya. Blend with garlic cloves, salt, and water to make a chunky salsa.
Beat eggs with salt and black pepper. Cook with onions until set, then add salsa and simmer.
Heat tortillas, spread beans, add potatoes, eggs, Queso Fresco, and avocado. Roll into burritos.
Cut open, serve with salsa, and enjoy!
