Boil macaroni with salt for 6 minutes until al dente, then drain.
In a large bowl, combine Fiesta blend cheese, Velveeta cheese, cottage cheese, melted butter, pepper, and paprika.
Add drained macaroni to the cheese mixture and stir until well combined.
Pour in milk and half and half, stirring until creamy. Adjust consistency with more milk if needed.
Transfer mixture to a greased baking pan, sprinkle remaining cheese on top.
Bake for 40 minutes until cheese is melted and slightly browned.
