Traditional Focaccia Recipe

Ingredients
- 20 grams of flour
- 200 milligrams of water
- 5 grams of yeast
- 5 grams of honey
- 8 grams of salt
- Olive oil
- Cherry tomatoes
- Kalamata olives
- Fresh oregano
- Pinch of salt
Instructions
- Mix water, honey, and yeast in a bowl. Add flour and mix well to make the dough. Let it rest at room temperature for an hour, then refrigerate overnight.
- Combine flour and salt, then mix with the dough until smooth. Shape into a ball and let it rest for 2 hours at room temperature.
- Reball the dough, let it rest for another hour, then divide into two portions and place in oiled pans. Cover and let it rest for an hour.
- Press the dough gently, add olive oil, cherry tomatoes, olives, oregano, and salt on top.
- Let the focaccia rest for 40 minutes at room temperature. Preheat the oven to 450°F.
- Bake the focaccia in the oven for 15-20 minutes until golden brown.
- Optionally, cook one focaccia on a preheated grill for a smoky flavor.
