Mix water, honey, and yeast in a bowl. Add flour and mix well to make the dough. Let it rest at room temperature for an hour, then refrigerate overnight.
Combine flour and salt, then mix with the dough until smooth. Shape into a ball and let it rest for 2 hours at room temperature.
Reball the dough, let it rest for another hour, then divide into two portions and place in oiled pans. Cover and let it rest for an hour.
Press the dough gently, add olive oil, cherry tomatoes, olives, oregano, and salt on top.
Let the focaccia rest for 40 minutes at room temperature. Preheat the oven to 450°F.
Bake the focaccia in the oven for 15-20 minutes until golden brown.
Optionally, cook one focaccia on a preheated grill for a smoky flavor.
