Italian Meatballs

Ingredients
- 12 lb ground beef
- 6 lb pork sausage
- Red bell peppers
- Green bell peppers
- Yellow onion
- Fresh parsley
- Garlic
- Eggs (10-12)
- Bread
- Milk
- Beef base
- Parmesan cheese
- Salt
- Black pepper
- Italian seasoning
- Olive oil
- Tomatoes (San Marzano style)
- Basil
Instructions
- Combine ground beef and pork sausage in a bowl.
- Process red bell peppers, green bell peppers, yellow onion, parsley, and garlic in a food processor until almost liquefied.
- Add the processed veggies to the meat mixture along with cracked eggs.
- Make a panad by blending bread, milk, and beef base until smooth, then add it to the meat mixture.
- Season with Parmesan cheese, salt, black pepper, and Italian seasoning. Mix well.
- Form meat mixture into balls about the size of a baseball.
- Preheat oven to 360°F and bake meatballs for about 45 minutes or until internal temperature reaches 165°F.
- For the sauce, sauté diced yellow onion and garlic in olive oil until softened. Add San Marzano tomatoes and simmer for 20 minutes.
- Blend the sauce until smooth, season with salt, and add fresh basil. Simmer for an additional 30 minutes.
- Plate the meatballs with the sauce and enjoy with spaghetti or pasta of your choice.
