Homemade Pita Bread

Ingredients
- 1 cup (240 ml) warm water
- 1/2 teaspoon sugar
- 1/4-ounce package of active dry yeast (2 1/4 teaspoons)
- 60 grams (1/2 cup) all-purpose flour
- 1 teaspoon salt
- 2 tablespoons olive oil
- 300 grams all-purpose flour (2 1/2 cups)
Instructions
- In a bowl with a stand mixer, combine warm water, sugar, yeast, and 1/2 cup of flour. Mix until well combined. Let it sit for 15 minutes until bubbles form.
- Add salt, olive oil, and the remaining 2 1/2 cups of flour. Stir until a shaggy dough forms.
- Knead the dough in the mixer on low for 3 minutes. Cover and let it rest for 10 minutes.
- Preheat the oven to 475°F with a heavy sheet pan on the lowest rack.
- Knead the dough in the mixer again for 2 minutes. If needed, knead by hand until smooth and elastic.
- Let the dough rise in a warm place for about an hour until doubled in size.
- Divide the dough into 8 pieces, shape into balls, and let them rest for 10 minutes.
- Roll out each ball into a 6-inch circle on a lightly floured surface.
- Bake the circles on the preheated sheet pan for 2 minutes until puffed, then flip and bake for another 2 minutes.
- Enjoy your freshly baked homemade pita bread with your favorite fillings or as a side to your meals.
