Season cubed chicken with salt and ground black pepper, then place in the Instant Pot.
In a bowl, mix together chopped onion, honey, coconut aminos, ketchup, canola oil, minced garlic. Pour this sauce over the chicken in the Instant Pot.
Cook the chicken on high pressure for 15 minutes. Remove the chicken from the sauce and place in a separate bowl.
Dissolve cornstarch in water and add the mixture to the Instant Pot. Saute for 5 minutes until the sauce thickens.
Generously coat the chicken with the thickened sauce, then remove from the pot.
Optionally, add veggies to the pot and coat them with any remaining sauce. Top with sesame seeds and green onions.
