Butter (can also use shortening, lard, or other fats)

Ice water
Instructions:
Mix flour, salt, and cold butter in a bowl until the mixture resembles coarse crumbs.
Slowly add ice water and mix until the dough comes together, being careful not to overwork it.
Divide the dough, shape into discs, wrap in plastic wrap, and chill for at least 30 minutes.
Roll out the dough on a floured surface to fit a pie plate, trim excess, and crimp the edges as desired.
For par-baking: Dock the crust, line with parchment paper, fill with pie weights, and bake at 425°F for 15-17 minutes.
Remove weights, bake for an additional 2-3 minutes until dry for par-baking, or 10-12 minutes until browned for blind baking.
Cool and use for your favorite pie recipe.
