Season chicken with garlic powder, Adobo seasoning, and black pepper.
Cook seasoned chicken in olive oil until browned and cooked through.
Remove chicken from the pan and set aside.
Melt butter in the same pan, add garlic, and sauté for 2-3 minutes.
Add white wine and lemon juice, cook for 5 minutes until reduced by half.
Reserve 2 tablespoons of the mixture, then add rice to the pan and cook for 3-4 minutes until browned.
Add chicken broth, salt, bring to a low boil, cover, and cook for 15-20 minutes, stirring occasionally.
Once the liquid is absorbed, turn off the heat, sprinkle with Parmesan cheese.
Place chicken on top, drizzle with reserved butter and garlic mixture, sprinkle with parsley and more Parmesan cheese.
Cover and let sit for 5 minutes before serving.
