Prepare the seasoning mixture by combining zesty herb seasoning pack, paprika, garlic powder, onion powder, parsley, black pepper, fresh rosemary, and fresh thyme leaves. Set aside.
Cut out the backbone of the Cornish hens to spread them out evenly. Preheat the oven to 400 degrees Fahrenheit.
Wash the Cornish hens and season them generously with the prepared seasoning mixture.
Cut baby potatoes and baby carrots, season with olive oil, salt, pepper, and the seasoning mixture. Set aside.
Place seasoned Cornish hens in a casserole dish and surround them with the seasoned vegetables.
Add fresh rosemary and thyme leaves on top, sprinkle with paprika and black pepper.
Pour chicken stock into the dish.
Bake in the preheated oven for 30 minutes, then baste with juices and add butter cubes. Bake for another 30 minutes, baste again, and continue baking until done (approximately 20 more minutes).
Serve the herb-roasted Cornish hens with the vegetables and pan juices. Enjoy!
