Toast cinnamon, nutmeg, bay leaves, cloves, cumin seeds, coriander seeds, cardamom, and red pepper flakes in a dry pan. Grind into a fine powder with freshly grated nutmeg.
Marinate chicken in yogurt, ginger, garlic, curry powder, salt, pepper, and olive oil for 4-24 hours. Broil chicken until cooked.
Finish cooking broiled chicken in the sauce for 5-10 minutes. Season with salt and pepper.
Serve chicken tikka masala over rice, garnish with cilantro. Enjoy!
