Ingredients

  • 1 stick of cinnamon
  • 1 nut of nutmeg
  • 2 dry bay leaves
  • 1 tablespoon of whole cloves
  • 2 tablespoons of cumin seeds
  • 3 tablespoons of coriander seeds
  • 1 tablespoon of cardamom
  • 1 teaspoon of red pepper flakes (optional)
  • 1 cup of full-fat yogurt
  • 2 inches of ginger, grated
  • 2 cloves of garlic, grated
  • Boneless, skinless chicken breasts
  • Salt and pepper
  • Olive oil
  • 2 tablespoons of vegetable oil
  • 1 small yellow onion, minced
  • 1 small bird's eye chili, minced
  • 1 tablespoon of tomato paste
  • 1 28-ounce can of crushed tomatoes
  • Pinch of sugar
  • 3/4 cup of heavy cream
  • Long grain basmati rice
  • Cilantro for garnish

Instructions

  1. Toast cinnamon, nutmeg, bay leaves, cloves, cumin seeds, coriander seeds, cardamom, and red pepper flakes in a dry pan. Grind into a fine powder with freshly grated nutmeg.
  2. Marinate chicken in yogurt, ginger, garlic, curry powder, salt, pepper, and olive oil for 4-24 hours. Broil chicken until cooked.
  3. In a saucepan, sauté onion, ginger, garlic, chili, tomato paste, and curry powder. Add crushed tomatoes, sugar, and cook for 5 minutes. Add heavy cream.
  4. Finish cooking broiled chicken in the sauce for 5-10 minutes. Season with salt and pepper.
  5. Serve chicken tikka masala over rice, garnish with cilantro. Enjoy!
