Homemade Chicken Tikka Masala

Ingredients
- 1 stick of cinnamon
- 1 nut of nutmeg
- 2 dry bay leaves
- 1 tablespoon of whole cloves
- 2 tablespoons of cumin seeds
- 3 tablespoons of coriander seeds
- 1 tablespoon of cardamom
- 1 teaspoon of red pepper flakes (optional)
- 1 cup of full-fat yogurt
- 2 inches of ginger, grated
- 2 cloves of garlic, grated
- Boneless, skinless chicken breasts
- Salt and pepper
- Olive oil
- 2 tablespoons of vegetable oil
- 1 small yellow onion, minced
- 1 small bird's eye chili, minced
- 1 tablespoon of tomato paste
- 1 28-ounce can of crushed tomatoes
- Pinch of sugar
- 3/4 cup of heavy cream
- Long grain basmati rice
- Cilantro for garnish
Instructions
- Toast cinnamon, nutmeg, bay leaves, cloves, cumin seeds, coriander seeds, cardamom, and red pepper flakes in a dry pan. Grind into a fine powder with freshly grated nutmeg.
- Marinate chicken in yogurt, ginger, garlic, curry powder, salt, pepper, and olive oil for 4-24 hours. Broil chicken until cooked.
- In a saucepan, sauté onion, ginger, garlic, chili, tomato paste, and curry powder. Add crushed tomatoes, sugar, and cook for 5 minutes. Add heavy cream.
- Finish cooking broiled chicken in the sauce for 5-10 minutes. Season with salt and pepper.
- Serve chicken tikka masala over rice, garnish with cilantro. Enjoy!
