Mix onion powder, garlic powder, salt, and cracked black pepper. Season the whole chicken with the mixture.
Cook the seasoned chicken in a slow cooker on high heat for 3 to 3 1/2 hours until tender.
Remove the chicken, let it cool, and separate the chicken breast from the rest of the meat. Chop the chicken breast into desired size.
Chop celery, red grapes, and parsley. Add them to a large bowl with the chopped chicken breast.
Mix in mayonnaise, Dijon mustard, and adjust seasoning to taste.
Add pecans and mix well. Adjust consistency with more mayonnaise if needed.
Serve the chicken salad on croissant rolls or white sandwich bread. Enjoy!
