Homemade Hot Chips Recipe

Ingredients
- Potatoes (Sebagos, Dutch creams, Russets, Maris Pipers, King Edwards)
- White vinegar
- Salt
- Peanut oil
- Beef fat or Tallow
Instructions
- Peel and cut potatoes into 1 cm square chips. Soak them in water for 20 minutes to remove excess starch.
- Drain the water and replace it with fresh cold water. Add vinegar (5 tablespoons) and salt (2 tablespoons). Bring to a simmer for 25-30 minutes.
- Drain and dry the chips. Use a fan to speed up the drying process.
- Heat peanut oil and beef fat to 200°C (392°F). Fry the chips for about 8 minutes until golden brown and crispy.
- For air frying, preheat the air fryer, toss chips in melted Tallow, and air fry at 200°C for 12-15 minutes until golden brown and crispy.
- Enjoy your homemade hot chips with a crispy exterior and fluffy interior.
