Bourbon Cherry Glazed Double Smoked Spiral Sliced Ham (Original video)
Ingredients:
10 lb spiral sliced ham
Dijon mustard
Honey barbecue rub
Bourbon barbecue pellets
1/4 cup quality bourbon
1/2 cup brown sugar
Cherry preserves
2 tablespoons orange juice
2 tablespoons apple cider vinegar
Dijon mustard
Salt
Instructions:
Preheat smoker to 250°F and place a wire rack in it.
Remove ham from packaging, drizzle Dijon mustard as a binder, and season with honey barbecue rub.
Insert a meter probe into the ham and place it on the preheated smoker with bourbon barbecue pellets.
In a saucepan, combine bourbon, brown sugar, cherry preserves, orange juice, apple cider vinegar, Dijon mustard, and salt. Simmer for 10 minutes, then set aside to cool and thicken.
When the ham reaches an internal temperature of 140°F, pour the glaze over the top, brush it in, and return the ham to the smoker for an additional 30 minutes.
