Classic Chili

Ingredients
- 2 tablespoons olive oil
- 1 medium to large onion, diced
- 5 garlic cloves, minced
- 1 pound ground beef
- 2 tablespoons tomato paste
- 1 can (14 oz) crushed tomatoes
- 1 can (14 oz) diced fire-roasted tomatoes
- 1 can (14 oz) navy beans or Northern beans, rinsed and drained
- 1 can (14 oz) kidney beans, rinsed and drained
- 1 1/4 cups chicken stock
- 2 tablespoons chili powder blend
- 2 teaspoons cumin
- 1 teaspoon paprika
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon maple syrup (optional)
Instructions
- Heat olive oil in a dutch oven pot and sauté diced onions with a pinch of salt for 3-4 minutes until soft.
- Add minced garlic and cook for 1 minute.
- Add ground beef, season with salt, and brown it with onions and garlic.
- Stir in tomato paste and cook for 1-2 minutes.
- Add crushed tomatoes, diced fire-roasted tomatoes, beans, and chicken stock.
- Mix in chili powder, cumin, paprika, garlic powder, oregano, salt, and black pepper. Add maple syrup if desired.
- Partially cover the pot and simmer for 25 minutes, stirring occasionally.
- Serve with your favorite toppings like cheese, cilantro, or sour cream. Enjoy with cornbread or bread of your choice.
