Ingredients
- Halva
- 415 grams good quality tahini
- 80 grams shelled pistachios
- 113 grams water
- 450 grams granulated sugar
- Flatbread
- 10 grams instant yeast
- 236 grams lukewarm water
- 15 grams granulated sugar
- 24 grams extra virgin olive oil
- 8 grams kosher salt
- 175 grams yogurt
- 525 grams all-purpose flour
- Rice
- 220 grams medium grain rice
- 35 grams unsalted butter
- 60 grams orzo
- 600 milliliters chicken stock
- Pickles
- 700 milliliters white distilled vinegar
- 240 milliliters water
- 10 grams granulated sugar
- 18 grams kosher salt
- 2 grams cumin seeds
- 3 grams coriander seeds
- 3 carrots
- 3 red Fresno chilies
- 2 large cucumbers
Instructions
- Make Halva: Mix tahini and pistachios. Boil water and sugar, then combine with tahini mixture. Press into loaf pan and cool.
- Prepare Flatbread: Combine yeast, water, sugar, olive oil, salt, and yogurt. Mix with flour, knead, rise, divide, roll, and cook in a pan.
- Cook Rice: Toast orzo, add rice and chicken stock to a rice cooker.
- Prepare Pickles: Boil vinegar, water, sugar, salt, cumin, and coriander. Pour over sliced vegetables.
- Grilled Peppers: Char peppers, cut into chunks, mix with garlic, herbs, spices, lemon juice, and olive oil.
- Make Gözleme: Mix flour, salt, water, and olive oil. Roll out dough, fill with spinach, feta, and cheese, cook in a pan.
- Prepare Toum (Garlic Sauce): Process garlic, salt, lemon juice, and oil until creamy.
- Make Jajik (Yogurt Dip): Mix yogurt, mint, dill, cucumber, garlic, olive oil, and seasonings.
- Prepare Shawarma: Season chicken thighs, layer with onions and garlic on a spindle, cook until done.
