In a saucepan, combine 50 milliliters of lemon juice with 1/2 teaspoon of baking soda. Allow the mixture to bubble up and then settle down to create a sodium citrate solution.
Add 80 milliliters of water or milk to the saucepan.
Gradually stir in 200 grams of melting cheese until fully melted over moderate heat.
Optionally, melt in some butter or add seasoning for extra flavor.
