For the dough, bloom yeast with sugar and warm water. Add more water, sugar, salt, olive oil, and flour. Knead until smooth, then let rise in the fridge for at least 24 hours.
Prepare the sauce by blending tomatoes, sugar, olive oil, oregano, and tomato paste. Refrigerate for a few days for better flavor.
Preheat oven with a pizza stone for an hour. Use string cheese or grated mozzarella and prepare toppings.
Stretch out dough, add sauce, parmesan, mozzarella, and toppings. Bake for 5-6 minutes until cheese browns.
Cool on a rack, then transfer to a cutting board and slice into quarters.
Take a dough ball, stretch it into an oval, and smear with olive oil, pepper, salt, and garlic powder.
Bake until lightly browned. Cut into strips and serve.
