Classic Homemade Lasagne

Ingredients
- 1 tablespoon olive oil
- 1 diced onion
- 2 cloves minced garlic
- 1 finely diced carrot
- 3 finely diced mushrooms
- 450 grams (1 pound) minced beef (12-20% fat)
- 3 tablespoons tomato puree
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- 1 crumbled beef stock cube
- 2 x 400g (14oz) tins chopped tomatoes
- 1/2 tablespoon brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 tablespoons unsalted butter
- 4 tablespoons plain all-purpose flour
- Milk
- 100 grams (1 packed cup) grated cheddar cheese
- Salt and pepper to taste
- 4 lasagne sheets
- 175 grams (1 and 3/4 cups) mixed mozzarella and cheddar cheese
- Parsley for garnish
Instructions
- Heat olive oil in a frying pan, sauté onion, garlic, carrot, and mushrooms.
- Add minced beef, cook until browned. Stir in tomato puree, oregano, thyme, Worcestershire sauce, beef stock cube, chopped tomatoes, brown sugar, salt, and pepper. Simmer for 15-20 minutes.
- Preheat oven to 200°C (400°F). Make bechamel sauce by melting butter, whisking in flour, then gradually adding milk. Stir in cheddar cheese, salt, and pepper.
- Layer lasagne in a baking dish: meat sauce, lasagne sheets, white sauce, meat sauce, repeat twice. Top with mixed mozzarella and cheddar cheese.
- Bake for 25-30 minutes until golden and bubbling. Garnish with parsley before serving.
