Reverse Seared Rib Eyes with Black Garlic Butter

Ingredients
- 3 large rib eyes
- Oil
- Homemade beef seasoning
- 1 stick of softened butter
- 1 tablespoon chopped rosemary
- 1 tablespoon black garlic paste with bourbon
Instructions
- Preheat smoker to 250°F.
- Lather rib eyes with oil and season with homemade beef seasoning.
- In a bowl, mix softened butter, chopped rosemary, and black garlic paste with bourbon.
- Roll the butter mixture into a log and set aside.
- Smoke the rib eyes for 1 to 1.5 hours until they reach an internal temperature of 120°F, flipping them halfway through.
- Remove the rib eyes from the smoker and let them rest for 10 to 15 minutes.
- Preheat a high heat grill.
- Sear the rib eyes for 1 minute per side.
- Top each rib eye with a slice of the black garlic butter.
- Slice and serve. Enjoy!
