Sear the steak in the hot pan, laying it away from you to avoid splattering.
Turn the steak over after 30 seconds for a beautiful sear.
Render down the layer of fat on the back of the steak.
Add crushed garlic and a sprig of thyme to the pan for flavor.
Turn the steak every minute for even cooking.
Add knobs of butter to the pan and baste the steak with the melted butter.
Remove the steak from the pan and let it rest before slicing and serving.
