Mix vegetable oil, white sugar, and fluffy brown sugar in a large bowl until well combined.
Add in 3 eggs and vanilla extract, and mix until well combined.
Add in grated carrots and mix.
In a separate bowl, mix flour, baking soda, salt, cinnamon, nutmeg, and clove.
Gradually add dry ingredients into wet ingredients, alternating with buttermilk. Mix until well combined.
Pour batter into greased and floured cake pans.
Bake at 350°F for 15-18 minutes.
Let cakes cool in the pan until warm to the touch, then flip them out.
Frost cakes with cream cheese frosting and top with pecans (optional).
