Combine milk, sugar, and yeast in a bowl. Stir and let it bloom.
Mix bread flour, all-purpose flour, salt, egg, and softened butter in a stand mixer for 6 to 8 minutes until a sticky dough forms.
Let the dough rise until doubled in size, approximately 1 hour.
Mix sugar and mixed spice in a bowl. Add white and black raisins, and lemon curd.
Flatten the dough, spread softened butter, sprinkle with sugar and mixed spice mixture, add mixed fruit, and roll up the dough.
Cut the rolled dough into buns and place them on a lined baking tray.
Let the buns rise for another 40-45 minutes.
Bake the buns at 160°C (180°C at home) for 20 minutes.
Prepare a quick sugar syrup by mixing sugar and boiling water. Drizzle over the baked buns.
Mix icing sugar with water to create a thick icing. Drizzle over the cooled buns and top each with a cherry.
