Mix 2 cups maseca, 1 teaspoon salt, and 2 cups warm water to form masa. Adjust water if needed to prevent cracking.
Knead the dough for 5-10 minutes, then let it rest for 15 minutes covered with a towel.
Form masa balls and pat them down to create gordita shapes.
Heat avocado oil on a comal and cook the gorditas until they develop a good color and puff up in the center.
Fill the gorditas with frijoles and queso or any desired filling.
