Calabacitas with Ground Beef and Panella Cheese

Ingredients
- 1 pound 80/20 ground beef
- 1 teaspoon whole cumin
- 1 teaspoon whole peppercorn
- 1/2 teaspoon Mexican oregano
- 3 large garlic cloves
- 1 cup water
- 1 cup chopped onions
- 1 large Jalapeno (seeds and veins removed)
- 4 ounces tomato sauce
- 3 large Roma tomatoes
- 2 tablespoons cilantro
- 1 1/2 cups hot water
- Better Than Bouillon Beef flavor
- Mexican squash (calabacitas) or zucchini
- 1 can sweet corn (15.25 oz)
- 10 oz Panella cheese
Instructions
- Brown ground beef in a pot, drain excess grease.
- Grind cumin, peppercorn, and Mexican oregano. Add garlic and water, set aside.
- Saute onions, Jalapeno, add tomato sauce, tomatoes, cilantro, and spices. Add broth, simmer for 10 minutes.
- Cut calabacitas into cubes, add to the pot with sweet corn. Simmer for 20 minutes.
- Add Panella cheese cubes, let them soften for 5 minutes.
- Serve with Mexican rice or beans. Enjoy!
