Calabacitas with Ground Beef and Panella Cheese (Original video)
Ingredients:
1 pound 80/20 ground beef
1 teaspoon whole cumin
1 teaspoon whole peppercorn
1/2 teaspoon Mexican oregano
3 large garlic cloves
1 cup water
1 cup chopped onions
1 large Jalapeno (seeds and veins removed)
4 ounces tomato sauce
3 large Roma tomatoes
2 tablespoons cilantro
1 1/2 cups hot water
Better Than Bouillon Beef flavor
Mexican squash (calabacitas) or zucchini
1 can sweet corn (15.25 oz)
10 oz Panella cheese
Instructions:
Brown ground beef in a pot, drain excess grease.
Grind cumin, peppercorn, and Mexican oregano. Add garlic and water, set aside.
Saute onions, Jalapeno, add tomato sauce, tomatoes, cilantro, and spices. Add broth, simmer for 10 minutes.
Cut calabacitas into cubes, add to the pot with sweet corn. Simmer for 20 minutes.
Add Panella cheese cubes, let them soften for 5 minutes.
Serve with Mexican rice or beans. Enjoy!
