Peel and slice the onion and potatoes. Place them in a baking dish and drizzle with olive oil. Season with salt and black pepper.
Cut the chicken breasts into small pieces and add them to the baking dish. Season with salt, black pepper, and red pepper.
In a separate bowl, whisk together the eggs, cream, salt, curry, and Provencal herbs. Pour the mixture over the chicken and potatoes.
Slice the tomato and place the slices on top of the mixture in the baking dish. Grate the Gruyère cheese and sprinkle it over the top.
Bake for 40 minutes.
After 40 minutes, remove the dish from the oven and bake for another 10 minutes.
Serve hot and enjoy!
