Crack two large eggs into a pie plate and whisk them with a fork.
Add 1/4 cup of milk, 1 tsp of granulated sugar, 1/8 tsp or 1/4 tsp of cinnamon, a pinch of salt, and a splash of vanilla extract to the eggs and whisk until smooth.
Heat a frying pan over medium-high heat and add 1 tsp of vegetable oil and a pat of butter.
Dip each slice of Texas toast into the batter mixture, coating both sides lightly.
Place the coated bread into the frying pan and cook for a couple of minutes until golden brown on the bottom.
Flip the bread over and cook for another minute or two until golden brown on the other side.
Repeat steps 4-6 with the remaining slices of bread, adding more butter and vegetable oil to the pan as needed.
Serve the French toast with maple syrup and powdered sugar (optional).
