Creamy Chipotle Shrimp

Ingredients
- 1/4 cup mayonnaise
- 1 cup sour cream
- 2 whole chipotle peppers in adobo sauce
- 1 tsp chipotle powder (if using dry)
- 1/2 lime (1 tbsp juice)
- 1 garlic clove
- Salt
- 1 red bell pepper
- 3 green onions
- 1 jalapeno pepper
- 1 tbsp fresh cilantro
- 1/2 cup milk (dairy or dairy-free)
- 2 tbsp olive oil
- 1 lb shrimp, peeled and deveined
- Rice or cauliflower rice for serving
Instructions
- Make the chipotle sauce by blending mayonnaise, sour cream, chipotle peppers, chipotle powder (if using dry), lime juice, garlic, and salt until creamy.
- Slice the red bell pepper, green onions, jalapeno pepper, and chop cilantro for garnish.
- Cook rice according to package instructions or prepare cauliflower rice.
- In a saute pan, heat olive oil and cook shrimp until opaque and pink, then set aside.
- Cook diced red bell pepper until softened, then add white parts of green onion, garlic, salt, and pepper. Cook for 2 minutes.
- Add chipotle sauce, milk, and simmer. Return shrimp to the pan to warm through.
- Adjust sauce consistency with more milk if desired.
- Remove from heat and garnish with green onion, cilantro, and jalapeno slices.
- Serve Creamy Chipotle Shrimp over rice, drizzle with extra sauce, and enjoy!
