In a mixing bowl, combine cream cheese, sweetened condensed milk, vanilla extract, cinnamon, and strong coffee. Mix until smooth.
Slowly add heavy whipping cream while continuing to mix until the mixture thickens.
In a tray, start layering the mixture with Galletas Maria cookies. Repeat the layers until the tray is full.
For the topping, mix cocoa powder and instant coffee. Sprinkle this mixture on top of the final layer.
Refrigerate the Carota de Cafe for at least 8 hours or overnight.
After chilling, slice and serve. Enjoy your delicious Carota de Cafe!
