Ingredients

  • For the rub
  • 1/3 cup paprika
  • 1/3 cup dark brown sugar
  • 1/4 cup kosher salt
  • 4 tsp ground mustard
  • 2 tsp ground black pepper
  • 2 tsp ground coriander seed
  • 1 tbsp dried oregano
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • For the ribs
  • Baby back ribs
  • Hickory or Mesquite wood chunks
  • For the barbecue sauce
  • 1 cup chicken stock
  • 1/2 cup ketchup
  • 1/4 cup dark molasses
  • 1 small onion, grated
  • 1 tbsp brown mustard
  • 2 tbsp Worcestershire sauce
  • 2 tbsp cider vinegar
  • 2 tsp hot sauce
  • For the patties
  • 2 lb pork shoulder, cubed
  • 1 tbsp kosher salt
  • 1 tbsp sugar
  • Extra spice rub
  • For the pickles
  • Kirby cucumbers
  • 1 cup water
  • 1 cup white vinegar
  • 1 tbsp salt
  • Red pepper flakes
  • Garlic cloves
  • Black peppercorns
  • Mustard seed
  • Fresh dill

Instructions

  1. Prepare the rub by combining all the rub ingredients.
  2. Rub the spice mixture over the ribs and refrigerate for at least 4 hours.
  3. Smoke the ribs on a grill until tender, then brush with homemade barbecue sauce.
  4. Remove bones from the ribs and coat with more sauce.
  5. For the patties, grind the pork shoulder and rib meat in a food processor, shape into patties, and grill.
  6. Make homemade pickles by pickling sliced cucumbers in a vinegar mixture.
  7. Assemble the sandwich with the saucy patties, homemade pickles, sliced onions, and buns.
