Wash collard greens thoroughly, removing any veins.
Cut bacon strips into chunks and fry in a large pot until browned.
Add a quarter cup of sugar to the pot and stir. Let it cook for a minute.
Begin adding collard greens in batches, allowing them to wilt before adding more.
Season with Everglades seasoning.
Pour in enough water to cover the greens (approximately six cups).
Cover the pot and simmer until the collard greens are tender.
Serve and enjoy!
