Instant Beef Birria (Original video)

Ingredients:

• 4 cups beef broth or water
• 3 tbsp white vinegar
• 1 tbsp tomato paste
• 5 tbsp New Mexico chile powder
• 1 tbsp Chile ancho powder
• 2 tsp garlic powder
• Onion powder
• Ground cumin
• 1 1/2 tsp ground cinnamon
• Oregano
• Black pepper
• 1 tsp thyme
• 1/2 tsp ground ginger
• 1/4 tsp ground clove
• Salt to taste (approximately 5 tsp)
• 2 1/2 lb Chuck tender roast
• 2 lb short ribs
• 2 Roma tomatoes
• 1/2 onion
• 5 garlic cloves
• 4 bay leaves

Instructions:

1. In a pressure cooker, combine beef broth, white vinegar, tomato paste, chile powders, garlic powder, onion powder, cumin, cinnamon, oregano, black pepper, thyme, ginger, clove, and salt. Mix well.
2. Add Chuck tender roast, short ribs, Roma tomatoes, onion, garlic cloves, and bay leaves to the pressure cooker.
3. Cook on high pressure for 55 minutes. Allow the meat to rest for 20 minutes after cooking.
4. Remove bay leaves and skim off any excess grease from the broth.
5. Shred the meat, discard bones, and pour consomé over the shredded beef.
6. Serve the Instant Beef Birria in burritos, tacos, ramen, or with rice and beans. Enjoy!
