Soak the potatoes in cold water for 3 minutes to dissolve the starch.
Add parsley, 3 eggs, 1/2 teaspoon of pepper, 1 teaspoon of black pepper, and 2 tablespoons of rice flour to the potatoes.
Pour the egg mixture over the potatoes and mix well.
Heat vegetable fat in a pan and add half of the potato mixture, spreading it evenly.
Sprinkle Mozzarella or Cheddar cheese over the potatoes.
Add the remaining potato mixture on top of the cheese.
Cover and cook until the bottom turns golden brown.
Flip the pancake, add more vegetable fat, cover, and cook until both sides are golden brown.
Serve hot for a hearty lunch or dinner. Enjoy!
