Chop 2 large potatoes and pour cold water over them. Cook until soft.
Add 2 pinches of salt, 1 teaspoon paprika, black pepper, and finely chopped parsley to the potatoes. Mix well.
Add 2 tablespoons of cornstarch to the potato mixture and divide it into 5 parts. Press lightly with a fork.
Beat 1 egg with a pinch of salt. Dip the potato bites in the egg mixture.
Coat the potato bites with breadcrumbs mixed with basil and parmesan cheese.
Heat vegetable oil in a pan and fry the potato bites until golden brown.
Remove excess oil with paper towels.
