Bake bananas at 350°F for 10-12 minutes until soft and mushy.
In a bowl, whisk together flour, salt, cinnamon, and baking soda. Set aside.
Mash the baked bananas until you have a nice paste.
Cream together brown sugar and butter until light and fluffy.
Add eggs one at a time, mixing well after each addition. Mix in vanilla extract.
Fold in mashed bananas into the batter.
Gently fold in the dry ingredients until just combined.
Grease a 9x13 inch loaf pan and pour the batter into it.
Bake at 350°F for 50-60 minutes until a skewer comes out clean from the center.
Let the banana bread cool before slicing and serving. Enjoy!
