6-8 medium-sized protein tortillas (18 cm diameter)
160 grams shredded cheese (e.g., fat-reduced Gouda or mozzarella)
Instructions:
Slice the chicken breast into fine pieces about 1 cm thick.
Season the chicken with garlic powder, onion powder, paprika, salt, pepper, and oil.
Cook the chicken in batches on medium-high heat until colored on both sides, about 1 minute per side.
Let the chicken cool slightly and make the sauce by blending cottage cheese, Sriracha, and honey until smooth.
Mix the sauce with the chicken until lightly coated.
Place 10 grams of shredded cheese on each tortilla, add chicken, and roll tightly.
Arrange the rollups in a baking pan and bake at 200°C (400°F) for 6-7 minutes until crispy.
Store in the freezer for up to 3 months.
Serve with avocado cream cheese dip or homemade ranch sauce.
