Prepare a flour mixture with cornstarch, baking powder, and the same seasonings used for the chicken. Transfer one third of this mixture to another bowl and add club soda to create a thin pancake batter consistency.
Dip each seasoned chicken tender first into the dry flour mixture, then into the wet batter, back into the dry, and finally into the wet again. Ensure it's coated well (wet, dry, wet, dry).
To make the honey barbecue sauce, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, hot sauce, honey, and cold butter in a saucepan. Cook until smooth.
Fry the coated chicken tenders in oil set at 350°F for 5-6 minutes. Allow them to rest, then fry for an additional minute until golden brown.
