8 slices sandwich bread
Butter
Cheese slices (e.g., cheddar)
Instructions:
Drain and rinse the cooked chickpeas, then mash them in a large bowl.
Add mayonnaise, Dijon mustard, red onion, garlic, pickles, parsley, lemon juice, salt, and pepper. Mix well.
Butter one side of each slice of bread and place four slices buttered side down on parchment paper.
Spread the chickpea mixture evenly on each slice, then top with cheese slices and the remaining bread slices buttered side up.
Heat a non-stick pan over medium heat and cook each sandwich for 3-4 minutes per side until golden and crispy, pressing down gently while cooking.
