Preheat oven to 400°F (204°C). Cut potatoes into medium to large dice, season with salt, pepper, and oil. Roast for 25 minutes.
Cut onions, poblano peppers, zucchini, and mushrooms. Cook in oil over high heat until browned.
Prepare queso by blending cottage cheese, pepper jack cheese, cheddar cheese, chipotle peppers, Adobo sauce, salt, garlic powder, and milk.
Brown ground beef with spices and tomato sauce until cooked through.
Divide ingredients into meal prep containers: potatoes, beef, vegetables, and queso. Top with cilantro.
Store in the fridge for up to 5 days. Reheat in the microwave or air fryer.
